I really enjoy this dish for breakfast but it is delicious for lunch also. Omit the rye bread for a very low carb option or use gluten-free bread if preferred. This dish has a really Scandinavian feel to it!
Prep time – 2 minutes, Cook time – 10 minutes, servings – 1
Ingredients
- 60g cooked and peeled prawns
- 1/3 medium avocado
- 1 boiled egg
- 1 slice rye bread (toasted)
Directions
- Place the egg in boiling water and boil for 10 minutes.
- Peel the egg under cold running water and set aside.
- Meanwhile toast your rye bread.
- Slice the avocado onto the rye bread and top with sliced boiled egg and prawns.
NB: if you are gluten free or low carbohydrate, you can omit the rye bread and have an extra boiled egg, avocado and prawns.
