Prawns, Avocado and Boiled Egg on Rye

I really enjoy this dish for breakfast but it is delicious for lunch also. Omit the rye bread for a very low carb option or use gluten-free bread if preferred. This dish has a really Scandinavian feel to it!

 

Prep time – 2 minutes, Cook time – 10 minutes, servings – 1

Ingredients

  • 60g cooked and peeled prawns
  • 1/3 medium avocado
  • 1 boiled egg
  • 1 slice rye bread (toasted)

Directions

  1. Place the egg in boiling water and boil for 10 minutes.

 

  1. Peel the egg under cold running water and set aside.

 

  1. Meanwhile toast your rye bread.

 

  1. Slice the avocado onto the rye bread and top with sliced boiled egg and prawns.

 

NB: if you are gluten free or low carbohydrate, you can omit the rye bread and have an extra boiled egg, avocado and prawns.
