Raw Beetroot Salad with Dill and Capers

I love this salad in the summer served with  a nice steak or mackerel and a dollop of home-made horseradish. Beetroot is said to stimulate detoxification in the liver, it is also one of the best sources of glutamine and amino acid that can help repair the gut. Best of all it is full of fiber and antioxidants!

 

Prep time –10  minutes, Cook time –0 minutes, servings – 2- 4

Ingredients

  • 2 large beetroots (peeled)
  • 1 shallot
  • 50g capers
  • 1 bunch of dill
  • 1 tbsp vinegar (balsamic, white wine, apple cider)
  • 1tbsp extra virgin olive oil
  • Salt and pepper to taste

Directions

  1. Thinly slice the shallot and place in a bowl, adding the vinegar and salt to soften the shallot.
  2. Grate the beetroot, I use my magimix but a hand grater is fine although more messy! Add this to the shallots
  3. Roughly chop the dill and add this with the capers.
  4. Add the olive oil and mix thoroughly.
