Poached Eggs with Smoked Salmon and Asparagus

I don’t get many lazy morning anymore, but if I do this is what I love…in fact both of my kids love this too…try it with really good smoked ham as an alternative!

Prep time – 5 minutes, Cook time – 5 minutes, Serving – 2

 

Ingredients

 

  • 1 bunch of asparagus (trimmed) approx 200g
  • 4 eggs (free range, organic)
  • 100g of smoked salmon
  • Juice of half a lemon
  • Drizzle of olive oil, rock salt and pepper

 

Directions

 

  1. Cook the asparagus in boiling, salted water for 2 minutes remove with a slotted spoon and set aside.

 

  1. Then poach your eggs in the asparagus water, adding a table spoon of white wine vinegar to help solidify the eggs, or use a buttered silicone poached egg moulds. Cook until the whites are set and the yolk is still runny (about 4 minutes)

 

  1. Transfer the asparagus to warm plates, top with smoked salmon and poached eggs. Drizzle with olive oil and season.
