Ingredients
- 1 large bunch of curly kale (about 200g) (stalks removed, thinly sliced)
- 1 lemon (zest and juice)
- 1 clove of garlic (crushed)
- 2 tbls olive oil (extra virgin)
- ½ tsp sea salt
- 1 ripe avocado (peeled and chopped)
- 1 yellow pepper
- 10 cherry tomatoes
- 2 tblsp toasted seeds
Instructions
- To make the dressing, whisk together the crushed garlic, lemon juice and zest, salt and olive oil until combined.
- In a large bowl add the kale and the dressing and massage for about 5 minutes until the leaves are wilting.
- Add the avocado and continue to massage until the leaves are coated with avocado. Leave for about 10 minutes to soften.
- Meanwhile, slice the peppers and halve the cherry tomatoes. Then in a clean bowl layer with kale, peppers, tomatoes and seeds. This salad holds well, so ideal for lunch boxes. It is great alone or with a few prawns, sliced chicken or feta cheese for a more substantial lunch.
