Ingredients
  1. 1 large bunch of curly kale (about 200g) (stalks removed, thinly sliced)
  2. 1 lemon (zest and juice)
  3. 1 clove of garlic (crushed)
  4. 2 tbls olive oil (extra virgin)
  5. ½ tsp sea salt
  6. 1 ripe avocado (peeled and chopped)
  7. 1 yellow pepper
  8. 10 cherry tomatoes
  9. 2 tblsp toasted seeds
Instructions
  1. To make the dressing, whisk together the crushed garlic, lemon juice and zest, salt and olive oil until combined.
  2. In a large bowl add the kale and the dressing and massage for about 5 minutes until the leaves are wilting.
  3. Add the avocado and continue to massage until the leaves are coated with avocado. Leave for about 10 minutes to soften.
  4. Meanwhile, slice the peppers and halve the cherry tomatoes. Then in a clean bowl layer with kale, peppers, tomatoes and seeds. This salad holds well, so ideal for lunch boxes. It is great alone or with a few prawns, sliced chicken or feta cheese for a more substantial lunch.
