Paleo Banana Bread

This is really popular in our house and even passes the children’s sweet taste buds. No added sugar and no gluten so ideal for those following a sugar/gluten free diet.

Prep time 10 mins, Cook time 40Serves: 8 – 10

Ingredients

  • 4 bananas (very ripe)
  • 4 eggs
  • 140g nut butter (almond, hazelnut, cashew etc.)
  • 4 tablespoons butter or coconut oil, melted
  • 75g coconut flour
  • 75g almond flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder (gluten free or homemade)
  • 1 teaspoon vanilla
  • 100g dark chocolate chips or nuts such as pecans, hazelnuts etc. (optional)
  • pinch of sea salt
 

Directions

  1. Preheat your oven to 180º C
  2. Combine your bananas, eggs, and nut butter, and butter in a food processor, or mixing bowl and mix well (if using a mixing bowl you need a good hand-mixer)
  3. Once all of your ingredients are blended, add in your coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and  other optional ingredients and mix well
  4. Pour your batter in a lined loaf tin and spread it evenly.
  5. Place in your preheated oven and bake for 45 minutes or until a toothpick inserted into the center comes out clean
  6. Remove from oven and flip your bread out onto a cooling rack
  7. Slice and serve
