Ingredients
- 4 bananas (very ripe)
- 4 eggs
- 140g nut butter (almond, hazelnut, cashew etc.)
- 4 tablespoons butter or coconut oil, melted
- 75g coconut flour
- 75g almond flour
- 1/2 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder (gluten free or homemade)
- 1 teaspoon vanilla
- 100g dark chocolate chips or nuts such as pecans, hazelnuts etc. (optional)
- pinch of sea salt
Directions
- Preheat your oven to 180º C
- Combine your bananas, eggs, and nut butter, and butter in a food processor, or mixing bowl and mix well (if using a mixing bowl you need a good hand-mixer)
- Once all of your ingredients are blended, add in your coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and other optional ingredients and mix well
- Pour your batter in a lined loaf tin and spread it evenly.
- Place in your preheated oven and bake for 45 minutes or until a toothpick inserted into the center comes out clean
- Remove from oven and flip your bread out onto a cooling rack
- Slice and serve
